Brinjal Fry

Ingredients:-

8-10 Medium- long and thin brinjals (the one which is light purple and white)

For Masala:-

10-12 red chillies
4-6 cloves of garlic
1 and half tsp. ginger
2 tsp Lemon juice or vinegar
Salt to taste

Method:-

In a bowl take water and add salt to it...Then cut the brinjals horizontally and then vertically and make incision in that so that the masala stays in there.....and soak brinjals in the above salted water for 15 minutes.
Next grind the above masala ,add a little water if the masala gets too dry.....
Remove the brinjal from the salted water, dry it in a paper towel, add the ground masala in it one by one.
Then take oil in a pan and fry the brinjals for few minutes, flip it over and fry again for some time(just as u fry fish),,,,i like mine fried well....so it takes a little longer....then serve it with chapati or eat with rice...either ways tastes good...

Chicken Drumsticks



Ingredients:-

Chicken drumsticks 8-10 pieces
Half a cup of curd, hang it in a muslin cloth overnight.
2 tbsp lime juice
3-4tbsp of chilly powder
1tsp turmeric powder
1 and half tsp coriander powder
1 and half tsp cumin powder
1and half tsp garam masala powder
Coriander leaves 8-10 stalks
Salt to taste

Method:-

1..Remove the skin from the chicken and marinate with the above ingredients for an hour of two...u can let it stand in the refrigerator till it is ready to go in the oven.

2. Preheat the oven to 400 degrees..

3. Bake for about 30 minutes or till done...we keep it a little longer as we prefer it very tender.
Enjoy it .

Potato Fry



Ingredients:-

3-4 medium size potatoes
2-3tsp chilly powder
half tsp turmeric powder
1tsp coriander powder
1tsp cumin powder
half tsp garam masala
Chat masala -optional
Salt as per taste

Method:-

1.Wash and cut the potaotes round and let it stand in salt water for 20 minutes.
2. Take all the above spices(except chat masala) in a bowl including salt and give a nice rub with your hands ..
3. Drain the water from the potatoe mixture and add the above rub to it....mix gently/
4. Heat oil in a skillet and add few tsp of oil enough to cover the skillet...then fry them each side for a minute or two...
5. Remove the potatoes and let it stand in a paper towel so that excess oil can be drained...Sprinkle with chaat masala and enjoy.

Shrimp Fry


Ingredients:-

25-30 medium shelled, devein shrimp- medium size
2 medium size onions
2tsp ginger garlic paste(Optional)
4-5 tsp chilly powder or more if you like spicy
1tsp turmeric powder
2tsp white or red vinegar
salt as per taste.
Coriander leaves for garnishing

Method:-

1.Clean , wash the shrimps and drain all the water

2.Add vinegar, ginger-garlic paste, chilliy powder, turmeric powder and salt to it, let it
marinate for 15-20 minutes or more if u want to.

3.Keep the skillet ready for frying on medium heat--u can add initially 2tbsp of oil, then just before frying ..slice the onions and mix with the prawns and put it in the skillet.

4.Keep frying on medium heat for 15-20 minutes , add more oil if required and then when it is almost cooked turn the heat to slow for 5-10 minutes....Garnish it with coriander leaves......

Enjoy it whichever way u want.
